These Chocolate Protein Energy Bites are my absolute favourite afternoon snack. They are so quick and easy to make, are packed full of healthy fats and protein and best of all they will help to curb that 3 pm sweet craving.
They are also great to have for an on-the-go breakfast with a smoothie and last really well out of the fridge for the day if you wanted to take some with you in the car or in your bag.
Boosters: I like to roll mine in a little-desiccated coconut, cacao powder or chia seeds to mix it up and sneak in more goodies, but you can always leave them as is like I’ve done below.
INGREDIENTS AND DIRECTIONS
INGREDIENTS
- 1 cup Medjool dates
- 1 cup of raw nuts (I used ½ almonds and ½ cashews)
- 2 tbsp of chia seeds
- 1 tbsp of melted coconut oil
- 1 scoop of Go Good Organic Chocolate Plant Protein Powder
- 1 scoop of Go Good Energy Smoothie Booster or 1 tbsp of cacao powder
- 2-3 tbsp of water
DIRECTIONS
- To your food processor add all the ingredients except the water and blitz for 30 seconds until combined.
- Next, slowly add in your water while the motor is running to help mix everything together. Use your judgment to assess how much water you need to help the mixture to form into a sticky ball.
- Once everything is mixed do a quick roll test by scooping a tsp worth of the mixture with a spoon and then rolling it into a ball with your hand. You will know that the mixture is perfect if it forms into a ball and holds. If its too dry add a little more water and mix again.
Roll the mixture into 12 balls and then place in the fridge to harden. They will last for 2 weeks in your fridge (if you don’t eat them all in one go)
EXTRA TIPS
If you’re wanting to enjoy your energy bites pre or post workout then you could always add in another scoop of protein powder and remove the booster or cacao powder to give it extra protein.
Boosters: I like to roll mine in a little-desiccated coconut, cacao powder or chia seeds to mix it up and sneak in more goodies, but you can always leave them as is like I’ve done below.
Personalise them: You can mix and match this recipe really easily depending on what you have on hand. I’ve suggested almonds and cashews for the nuts but feel free to use whatever you have on hand. You can also replace the Medjool dates for dried apricots or for a completely sugar-free option replace with nut butter.
