This week’s recipe: Protein Pancakes. Fluffy, satisfying, and packed with 43g of protein.
One of the best things about protein powder is just how versatile it is. It’s not just for shakes you can whisk it into pancakes for those slower, colder mornings, or even stir it through yoghurt as a high-protein topping instead of only mixing it into the batter.
INGREDIENTS
Pancakes
- 1 egg
- 20g of GoGood Whey Protein Powder + Organic Vanilla
- 80g Greek yogurt
- 25g Oat flour
- 1⁄2 tsp baking powder
- 1 tsp natural sweetener
- Pinch of salt
Topping
- 70g frozen blueberries (heated till warm)
- 80g Greek Yogurt
- Vanilla Pudding Mix
- Maple syrup to taste
- Desiccated coconut
DIRECTIONS
- Stir all ingredients together.
- Heat up a nonstick pan with olive oil.
- Cook pancakes as usual. (TIP: cover the pan with a lid to cook the top, this makes for easier flipping)
- For the toppings: heat 70g frozen blueberries till warm, then mix in 80g Greek yogurt and 3/4 vanilla pudding mix
- Top with toppings and enjoy.
